Holidays

It's so easy to get derailed from blogging. A stomach virus had us laid out flat, my husband had a very busy travel schedule, and there were so many school events and holidays and projects to attend to. Suddenly you realize that you are no longer allotting time to blog, but instead posting 30 second bursts of pics on Facebook instead.

We arrived back from Florida just in time for the brunt of the winter holidays.
Here is one of the travel meals I made for the plane, in nestable containers for the kids so they would take up little space when emptied, and the grownup meals were packed in recycled disposable containers. There was sesame tofu, marinated mushrooms, blanched spinach, soba noodles, and pickles.

One thing I don't own is
a crock pot or slow-cooker;
I rely on my rice cooker or
deep Calphalon cookware
for those tasks. But the
Florida house is stocked with
a crock pot, so I used it to
make easy dishes like chili,
so I could spend more time
enjoying the vacation instead
of cooking for the family. I
made sure to plan ahead for the trip, pre-mixing the spices I'd need for various dishes in zip-top snack bags, pre-measured for easy cooking. You don't want to have to go out and purchase half a dozen spices when on vacation just to make a tasty meal!

After spending most of
every day in the pool
(thank goodness it was
heated because the
weather in Florida was
unusually COLD), it
wasn't easy to come back
to New England and want
to jump right into Xmas
and snow.


At least Delta was able
to ease that transition
with free drinks.

Because my husband
travels so much, he is
allowed free upgrades
to business class, which
he graciously passed on
to me for our trip.


Many airlines only serve
non-vegan meals on
domestic flights that must
be purchased onboard
(unlike international
flights where you can order
a vegan meal ahead of time
for no extra charge). But at
least the snacks are often
vegan, like these cookies.

I still had a few more
days of school lunches
to pack before schools
were off for the holidays.
Even if I wasn't in the
mood for fancy face
food, I could still try to
make a simple sandwich
into something festive.

So I got out the holiday
cookie cutters and made
reindeer sandwiches. A
red sprinkle affixed to the
nose completed the face.

For a full sandwich, I just
use a sandwich keeper
from Tupperware or one
from the Target $1 section.
There's usually plenty of
space along one side to add
some crudites.

For a treat for the kids,
and to give away to
family and friends, we
made some sugar cookie
stars. Super yummy as
always, these are one of
my favourite kinds of
cookies ever--slightly
crisp on the outside, but
they stay soft inside for
many days (if they last
that long before being
eaten). I often make sugar cookies for school events because nobody can resist them.

I also made a bunch of
mini loaves of walnut
crusted banana bread.
I must say it's nice to
be able to cook with nuts
when on school holidays,
since almost every school
nowaday is nut-free.




We spent the rest of
the school holiday
visiting with relatives
nearby, playing in the
snow, and even got in
a trip to the local
Danforth Art Museum.

AJ is rather interested
in taking art classes
there some time.

There was an adorable
exhibit from the
children's book
Pocketful of Posies
by Salley Mavor, of
her embroidered
fabric nursery rhyme
scenes.




In between all of the
inevitable holiday
treats I try to infuse
some balance with
healthy snacks. Here
was an entirely green
snack of raw broccoli,
bell pepper, snap peas,
celery sticks, and
cucumber slices.


Shortly after the new
year we celebrate
AJ's birthday. He
requested a chocolate
Mario Bros. cake.
I used raisins for the
eyes, and we served it
with vanilla soy ice
cream.

AJ had a painting party
at Plaster Fun Time.
Again I had to make Mario Bros. themed cupcakes. They were a big hit.

And then came the dreaded stomach virus...slowly making it's way through every family member, my husband twice, and two of the kids THREE times. We were all but quarantined for 3 weeks! We never get flu or strep or many colds, but offer us a tempting stomach bug and apparently we can't say no. Ugh.

And so we passed the rest of January stuck indoors, with near-record snowfall, doing lots of laundry (but little cooking).

I made quite a few
noodle soups, but
mostly we served up
crackers and ginger
ale. At least with
soup I could still
use most of the
vegetables from our
winter farm share.



Otherwise I made
simple dishes like
roasted vegetables,
mashed potatoes,
and muffins. It wasn't
easy to get outside
even when everyone
was feeling better
because of the
extremely
deep snow.

Don't Mess

...With Texas. It may have been a holiday, but Dada was off on back to back trips to Texas. So I made this snack for his flight.
Husband's snack: clementine on the side; spinach salad w/tomato slices, kalamata olives & chives w/Goddess dressing on the side; mini pumpkin muffin.

The tomatoes and chives are still from our CSA share last month! But there's only one more ripe tomato in the fruit bowl. Luckily the boys were happy to have more green tomato salsa with their lunch...
Top clockwise: sauteed Tofurky sausage & collard greens; pita chips; spinach & chive hummus; tortilla strips; green tomato salsa; waffle pretzels; baby carrots & cucumber slices.

raw

I've done the raw thing from time to time in my life, but I'm doin' it again for 40 days with a friend.
So instead of the usual raw blogging featuring the best meal of the day, or unique smoothie recipes and such, I'm just gonna list what I eat for the entire day for anyone who's curious...and throw a pic in here or there...

7:30am- smoothie: 1 banana, 4 frozen cherries, 1/3 cup frozen mango, 2 T. sunflower seeds, liquid DHA, water.
9:30am- small bowl of cantaloupe chunks.
11:30am- 1 orange; 12 mini baby carrots; 6 celery sticks (2 stalks).
1:30pm- smoothie: 1 banana, 1/2 a pear, handful of spinach, 1 tsp. tahini, pinch of mint, water.
4pm- 1 blood orange.
5:30pm- salad: romaine lettuce, purple cabbage, 1/2 a red bell pepper, a little chopped onion, balsamic vinegar.

Aside from my food, I did make a travel meal for my husband before he left this morning...no toothpicks 'cause ya know he might hijack the entire flight crew with a wooden toothpick. ;-)
Husband's lunch: Dr. Praeger's Tex Mex veggie burger on wheat bread w/mustard and onion; moro blood orange segments; pickle slices; baby carrots.

Fly away friday

I'm taking fridays off from alphabet bentos. By the end of the week I need groceries and it would likely be impossible to complete a one-letter lunch.

In lieu of AJ and I visiting the Mary Had A Little Lamb schoolhouse last weekend, here is a little lamb for both boys, inspired by Anna the Red.

Ryan's lunch: green leaf lettuce; rice ball w/Tofurky face & nori eye; cucumber flowers; Tofurky flower; purple grapes; steamed broccoli; bell pepper strips; blueberry soy yogurt on the side.

AJ and Dada also needed lunches. AJ is going on his first business trip to Atlanta for the weekend.

AJ's lunch (in a disposable recycled container): cucumber flowers; green leaf lettuce; Tofurky flower; rice ball w/Tofurky face & nori eyes; purple grapes; yellow bell pepper star; gherkin pickle; rice ball w/goma shio; tofu hot dog segment w/edamame; mini banana muffin; steamed broccoli.

Husband's lunch (in disposable recycled container): green leaf lettuce; rice triangle w/nori; bell pepper strips; salted radish slices; cucumber slices; Tofurky flower; rice ball w/goma shio; steamed broccoli; mini banana muffin; purple grapes; clementine on the side.

Of course I also had to pack AJ's suitcase full of food for the weekend. Atlants isn't exactly a mecca for vegan cuisine...
Travel food: pear cups; Rice Dream drink boxes; juice boxes; mini Luna bars & 1 full-size Luna bar; chocolate chip animal cookies; fruit twist; raisin & peanut mix; dried vegetable chips; mini bagels; berry applesauce; 2 Dum Dum lollipops; Corn Nuts; container of peanut butter.














Maia tried to pack Dada's
suitcase full of toys. And
she wouldn't stay out of
the little suitcase, sitting
there shuffling (and ruining)
a few of Dada's extra Magic
cards. Wouldn't the baggage
handlers be surprised to
find this little stowaway?

Ryan's lunch: 2 meatless meatballs; celery sticks; red bell pepper strips; leftover homemade pizza; 1 tiny Equal Exchange dark chocolate; snap peas; dried apricots.

Nate

it would

Healthier Hummus

1 can (15.5 oz.) chick peas, rinsed & drained
1 can cannellini beans, rinsed & drained
2 T. tahini
2 T. ground or milled flax seeds
2 cloves garlic, roughly chopped
1/2 tsp. salt
1/2 tsp. dried seaweed mix (I used Sea Seasonings organic Triple Blend Flakes made of dulse, laver & sea lettuce)
2 T. lemon juice
2 T. olive oil
1/3 cup water

Put everything in a food processor, adding water slowly as hummus mixes. Process until smooth.

Cotton Candy Land

A trip to the cousins'
house always necessitates
packing some munchies...
not because they won't
offer vegan-friendly food,
but because we don't want
to wipe out their cabinets;
they can sympathize with
their 4 younger boys still
at home. It's quite the mayhem when they all get together!

Monday:
AJ's snack:
canteloupe;
rice ball;
broccoli.





Ryan's lunch: cantaloupe chunks & cherry halves; steamed broccoli; 1/2 a Glenny's brown rice marshmallow treat topped with chocolate peanut butter; rice balls with stamped soy wrappers.
I packed up a trove of non-perishable snacks for Ryan's trip with Dada. Memphis is not exactly a vegan destination location!

Ryan's suitcase conveyed
the food, his bathing suit,
and his YMCA swim
bubble. These days you
have to pack and check
any liquids you want to
bring along, like rice milk
for instance.


Tuesday:
Ryan's lunch: Luna bar; cherries; Tofurkey sandwich topped with red bell pepper "poinsettia" with cucumber "leaves"; baby carrots; bread "flower" spread with chocolate peanut butter.

AJ's snack:
cantaloupe;
carrot; Veggie
Booty; Tofurky

sandwiches.


Nate's lunch:
grape tomatoes;
blackberries;
cucumber slice;
Tofurky "flower"
sandwich; a cherry;
a carrot; red bell
pepper strips.

Thanks to Two Vegan
Boys
for reminding me
that I hadn't had a curry
in months! And I'd never
thought to add zucchini.
So I whipped up my
usual recipe with the
added zucchini and some
farm carrots.

Wednesday:

Reindeer
Cupcakes!
These too
cute
fellows
are the
brainchild
of River
over at
Wing-It
Vegan
. I
used a
homemade
chocolate
ganache
instead, &
the basic
chocolate
cupcake recipe from VCTOTW. The kids in AJ's class were the lucky recipients at snack time today.

Then it was time to
whip up dinners
for Ryan and Dada's
airplane trip.
Thai spring rolls;
grape tomatoes;
a festively frosted
chocolate cupcake;
smoked tempeh,
lettuce & tomato sandwiches; edamame...

Cold soba noodles;
cherries; grapes;
carrots; avocado
maki.

I packed everything
in recyclable/disposable
packaging so Dada didn't
have to worry about
losing or washing containers. Both were containers from packaged food such as Veggie Chips and donut holes from Whole Foods. They ended up being the perfect sizes for a shared father-son travel dinner.

Thursday:
AJ's snack & Nate's lunch: grapes; grape tomatoes; cold tofu; steamed broccoli; soba noodles.

So far I've heard the trip to the Magic the Gathering World Championships in Memphis, Tennessee is going well. Dada is a special guest there this year. This is the longest I've ever been apart from one of my children. They enjoyed a dinner meeting at the Graceland mansion, and a vegetable sushi platter at Bluefin.

Friday:
Maia is 5 months
old! She can stand
pretty well now
against things or
with assistance.
She got 2 teeth
last month. And
she has almost
enough Hello Kitty
outfits to wear one
every day of the
week, LOL.

She loves rolling,
playing with her
toys, going to the
YMCA, and being
bugged by her 3
big brothers.
